Kale was one of the first leafy greens to gain notoriety for its seemingly endless health benefits. Kale should not steal all of the limelight, though, because there are many other leafy greens in our Produce Departments that are high in nutritional value. That’s why it’s important to never leave the store without a bunch of spicy Mustard Greens, earthy Chard or hearty Collard Greens.
Chard (Green, Red & Rainbow)
Chard is rich in Vitamin K, which helps maintain proper heart health. The Vitamins A and C that are found in Chard stimulate and improve your immune system. B complex vitamins help in the fight against tiredness and depression. Chard even contains a high enough level of calcium to help support healthy bones.
Kale (Dino, Green & Red)
Kale is a nutritional powerhouse and is one of the healthiest vegetables on the planet. Kale offers everything you want in a leafy green. Kale is loaded with Vitamins A, C and K, contains a nice level of calcium, as well as it supplies folate and potassium to the body. This amazing leafy green also contains the eye-health promoting compounds lutein and zeaxanthin.
Enjoy Kale any way you’d like, but in case you would like a couple of ideas, we have recipes for Dino Kale with Lemon Tahini Sauce or Curly Kale with Miso Sauce.
Mustard Greens
Mustard Greens give off a mustardy smell while they’re being cooked and have a distinctive peppery taste. They contain a high amount of fiber, folate and antioxidants that help remove free radicals (damaging cells) from the body. Mustard Greens are high in Vitamin C and Magnesium, which help the lungs to stay relaxed and therefore are beneficial to people who suffer from asthma.
Dandelion Greens
Believe it or not, Dandelion Greens are edible…and tasty! They have a mild, pleasant, slightly bitter taste. They promote digestion and help to balance the natural and beneficial bacteria in your intestines. The greens have also been shown to improve liver function by helping to reestablish hydration and electrolyte balance. Their rich antioxidants help maintain healthy cells.
Collard Greens
Collard Greens are another leafy green nutritional powerhouse. They have a lot of fiber, which lowers the level of LDL, or “bad cholesterol,” in the blood. When eaten regularly, Collard Greens act as an antioxidant to purify the body. They also contain Vitamin K and other minerals which can help to ensure better bone development and help with the formation of healthy cells in the body.
With so much nutritional value, these leafy greens are too good to pass up. At Oliver’s Market, we believe in the Healthiest You…it’s not a diet, but a way of life.
