Watermelon & Jicama Salad
Watermelon and jicama combine to form a salad that is superbly light and incredibly refreshing. Bring it to a summer barbecue as a side dish or mix up a big batch and snack away!

Ingredients
- 4 c. Seedless Watermelon, cut into chunks
- 2 c. Jicama, peeled & cut into small chunks
- 1/2 c. Lime Juice
- 2 tbsp. Honey
- 1 tsp. Lime Zest
- 1/3 c. Mint Leaves, roughly chopped
- 1 tsp. Salt
- 1 tsp. Chili Powder
- 1/2 tsp. Black Pepper
Instructions
In a small bowl, combine lime juice, honey, lime zest, mint leaves, salt, chili powder, and black pepper.
Combine watermelon and jicama chunks in a large salad bowl, then top with dressing. Toss to combine, serve immediately.
