- Serves: 1 Ball
- Prep Time: 20 minutes
- Cook Time: 1 hour
Ingredients
- 4 Russet Potatoes, peeled and cubed
- 1 tbsp. Butter
- 1 c. Cream Cheese, at room temp.
- ½ c. Cheddar Cheese
- ¼ c. Chives, finely chopped
- 1 Garlic Clove, grated
- 6 strips Bacon, cooked
- Salt and Pepper
Instructions
Boil potatoes until fork tender, then drain and mash with butter; allow to cool. While potatoes cool, put bacon into the bowl of a food processor and pulse until roughly crumbled; remove half and set aside, then continue to pulse remaining bacon until coarsely ground.
Combine mashed potatoes, cheddar cheese, cream cheese, crumbled bacon, and chives in a large bowl and season to taste with salt and pepper. Mix until uniform, then shape mixture into a ball. Wrap in plastic wrap and chill for at least one hour. To serve, roll ball in ground bacon. Serve with thick-cut potato chips or crackers.
