Masala Sweet Corn

Tender kernels of corn combine with tomatoes, onions, and plenty of spices for a flavorful dish that’s great as a side or even as a healthy snack.

Ingredients

  • 5 large ears Sweet Corn, shucked & washed
  • 2 tbsp. Fresh Lime Juice
  • 2 tbsp. Unsalted Butter
  • 2 large Roma Tomatoes, finely chopped
  • 1 large Shallot, finely chopped
  • 1 Jalapeno or Serrano Pepper, thinly sliced
  • 1 tbsp. Cilantro, finely chopped
  • 1 tsp. Garam Masala
  • 1/2 tsp. Sweet Paprika
  • 1/2 tsp. Cayenne Pepper
  • Crushed Fried Vermicelli (optional)
  • Salt & Black Pepper, to taste

Instructions

  1. Sliced corn kernels from cobs using a sharp knife, then place in a large pot. Fill with enough water to cover corn, then place on high heat and bring to a boil. Reduce heat to medium and cook until corn is tender, about 10 to 15 minutes. Drain cooked corn, and transfer to a large, non-reactive mixing bowl.

  2. Toss hot corn with butter to coat. In a separate, small mixing bowl, combine garam masala, paprika, and cayenne. Mix buttered corn with tomatoes, shallots, cilantro, sliced peppers, spices, and lime juice, then add salt and black pepper to taste. Top with crushed Vermicelli noodles before serving, if desired. Great as a side salad or a healthy snack.
