Marinated Heirloom Tomatoes

Ingredients

  • 3 Medium to large Heirloom tomatoes
  • 4 Cloves garlic, Minced
  • 1 C. Extra virgin olive oil
  • ½ C. + 4 tsp. Red wine vinegar
  • ½ tsp. Dried oregano
  • Kosher salt, to taste
  • Black pepper, to taste

Instructions

  1. Add Minced garlic, vinegar, olive oil, salt, pepper, and oregano to a small bowl. Whisk together the marinade ingredients until they are emulsified.

  2. Slice the tomatoes and layer them in a glass or ceramic pie plate, or baking dish.

  3. Pour the marinade over the tomatoes. Cover with a lid and move them to the fridge.

  4. Marinate for 2 to 24 hours, then serve.

  5. Note: Eat as is or add these to a salad or sandwich for extra flavor!
