Marinated Heirloom Tomatoes
Ingredients
- 3 Medium to large Heirloom tomatoes
- 4 Cloves garlic, Minced
- 1 C. Extra virgin olive oil
- ½ C. + 4 tsp. Red wine vinegar
- ½ tsp. Dried oregano
- Kosher salt, to taste
- Black pepper, to taste
Instructions
Add Minced garlic, vinegar, olive oil, salt, pepper, and oregano to a small bowl. Whisk together the marinade ingredients until they are emulsified.
Slice the tomatoes and layer them in a glass or ceramic pie plate, or baking dish.
Pour the marinade over the tomatoes. Cover with a lid and move them to the fridge.
Marinate for 2 to 24 hours, then serve.
Note: Eat as is or add these to a salad or sandwich for extra flavor!
