Lasagna Soup

Ingredients

  • 2 Tbsp. Olive oil
  • 1 Onion, diced
  • 2 Cloves garlic, minced
  • 1/2 lb. Ground beef
  • 1/2 lb. Italian sausage
  • 1/2 tsp. Salt
  • 1/4 tsp. Black pepper
  • 1/2 tsp. Red pepper flakes
  • 1 Jar Rao's Homemade Marinara sauce
  • 3 C. Chicken broth
  • 1/2 C. Heavy cream
  • 8 oz. Lasagna noodles, broken into pieces
  • 1/2 C. Grated Parmesan
  • 8 oz. Fresh mozzarella, shredded
  • 1/4 C. basil, chopped

Instructions

  1. Heat oil in a large sauce pan over medium heat.

  2. Add onion and cook, stirring occasionally, until color has faded, or about 7 minutes.

  3. Stir in garlic and sauté for one minute. Then add beef, Italian sausage, salt, pepper, and red pepper flakes. Break up meat and cook until there are no pink spots left.

  4. Stir in Marinara sauce. Add chicken broth and heavy cream, bring to a boil.

  5. Once the soup is boiling, add lasagna noodles and cook until tender, 10 to 15 minutes.

  6. Remove from heat and stir in Parmesan and mozzarella until melted. Top with basil.
