Apple Cider Braised Chicken Breast

Ingredients

  • 4 Boneless, skinless chicken breasts
  • 2 C. Apple cider
  • 1 Medium onion, sliced
  • 2 Cloves garlic, minced
  • 1 tsp. Fresh thyme (or 1/2 tsp. dried)
  • 1 tsp. Fresh rosemary (or 1/2 tsp. dried)
  • 2 Tbsp. Olive oil
  • Salt and pepper to taste
  • 1 C. Chicken broth
  • Sliced apples for garnish (optional)

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.

  2. In a large skillet or Dutch oven, heat olive oil over medium-high heat. Add the chicken breasts and sear for 3-4 minutes on each side until golden brown. Remove the chicken and set aside.

  3. n the same skillet, add sliced onions and cook until translucent, about 3 minutes.

  4. Add the minced garlic and cook for an additional minute.

  5. Pour in the apple cider, scraping up any browned bits from the bottom of the pan. Stir in the thyme and rosemary.

  6. Return the chicken to the skillet and add the chicken broth. Bring to a simmer, then reduce the heat to low.

  7. Cover and cook for 20-25 minutes, or until the chicken is cooked through and tender.

  8. Remove the chicken from the skillet and let it rest for a few minutes. Serve with a spoonful of the braising liquid, garnished with sliced apples if desired.
