Arugula Salad

Ingredients

  • 2 Tbsp. Olive oil
  • 2 Tbsp, Fresh squeezed lemon juice
  • 1/8 tsp. Kosher salt
  • Fresh ground black pepper
  • 5 oz. Arugula (about 5 cups, packed)
  • 2 oz. Shaved Parmesan cheese (about 2/3 cup)

Instructions

  1. Whisk the olive oil, lemon juice, salt, and a few grinds of black pepper together in a large bowl.

  2. Add the arugula and toss to combine.

  3. Top with the shaved Parmesan and serve immediately.
