Arugula Salad
Ingredients
- 2 Tbsp. Olive oil
- 2 Tbsp, Fresh squeezed lemon juice
- 1/8 tsp. Kosher salt
- Fresh ground black pepper
- 5 oz. Arugula (about 5 cups, packed)
- 2 oz. Shaved Parmesan cheese (about 2/3 cup)
Instructions
Whisk the olive oil, lemon juice, salt, and a few grinds of black pepper together in a large bowl.
Add the arugula and toss to combine.
Top with the shaved Parmesan and serve immediately.
