Cherry Chutney

Ingredients

  • 3 C. Fresh tart cherries, Pitted
  • 1 Large sweet onion, finely chopped
  • 1 Small green pepper, chopped
  • 1 Small sweet red pepper, chopped
  • 1/3 C. Packed brown sugar
  • 1/4 C. Balsamic vinegar
  • 2 tsp. Minced fresh ginger root
  • 1-1/2 tsp. Grated orange zest
  • 1/2 tsp. Ground cardamom
  • 1/4 tsp. Salt
  • 1/4 tsp. Crushed red pepper flakes
  • 1/4 tsp. Ground allspice

Instructions

  1. In a large saucepan, combine all ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 45-50 minutes or until vegetables are tender and mixture achieves desired thickness, stirring occasionally. Serve warm or chilled. Refrigerate leftovers.
