Cherry Chutney
Ingredients
- 3 C. Fresh tart cherries, Pitted
- 1 Large sweet onion, finely chopped
- 1 Small green pepper, chopped
- 1 Small sweet red pepper, chopped
- 1/3 C. Packed brown sugar
- 1/4 C. Balsamic vinegar
- 2 tsp. Minced fresh ginger root
- 1-1/2 tsp. Grated orange zest
- 1/2 tsp. Ground cardamom
- 1/4 tsp. Salt
- 1/4 tsp. Crushed red pepper flakes
- 1/4 tsp. Ground allspice
Instructions
In a large saucepan, combine all ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 45-50 minutes or until vegetables are tender and mixture achieves desired thickness, stirring occasionally. Serve warm or chilled. Refrigerate leftovers.
