Curried Chicken Salad
This classic salad make a terrific healthy lunch! Enjoy it rolled into a wrap, mounded on a sandwich, or even just pile it on a plate as an easy lunch everyone will enjoy.
- Serves: 4-6 servings
- Prep Time: 15 minutes
Ingredients
- 1 Rotisserie Chicken cooled & shredded
- 1/4 c. Mayonnaise
- 2 tsp. Curry Powder
- 1/2 c. Roasted Cashews, roughly chopped
- 1/4 c. Celery, finely chopped
- 1/4 c. Raisins
- 1 c. Shredded Carrots
- 1/2 small Red Onion, finely diced
- Salt & Black Pepper, to taste
- Bread & Lettuce (for serving)
Instructions
Combine all ingredients in a large bowl, and season to taste with salt and pepper. Great for a quick lunch!
