Farmer’s Cheese Liptauer Spread
This week, check out an Oliver’s exclusive straight from from Valley Ford Cheese and Creamery: their wonderfully light and creamy Farmer’s Cheese! This spread made from farmer’s cheese is a traditional Slavik dish popular in Austria and Hungary; it’s loaded with sweet paprika, briney capers, and pungent caraway seeds. Try it as a delicious dip with crackers or spread it on some dark bread for an afternoon snack!

Ingredients
- 8 oz. Valley Ford Farmer's Cheese
- 4 oz. Butter, softened
- 1 tbsp. Sweet Paprika
- 1 (4oz) jar Capers, chopped
- 1/2 tsp. Brown Mustard
- 1/2 tsp. Caraway Seeds
- 1 large Shallot, finely minced
- 1 clove Garlic, finely minced
- Salt & Black Pepper
Instructions
Beat together the farmer's cheese and butter until well-mixed and fluffy. Stir in paprika, capers, mustard, caraway seeds, shallot, and garlic until paprika has been totally combined and other ingredients are evenly dispersed. Season generously with salt and pepper, stirring again.
Transfer liptauer mixture to a small serving bowl and cover tightly with plastic wrap, then refrigerate for 1 hour to set. Serve on any dark brown bread and top with veggies, smoked fish, or sliced pickles.
