German Potato Salad
Lighter than a standard potato salad, this dish is perfect for your next summer BBQ!
- Serves: 4-6 servings

- Cook Time: 20 minutes
Ingredients
- 2 lbs. Red Potatoes, cut into large cubes
- 1 lb. Bacon, diced
- 2 Shallots, finely diced
- 2 cloves Garlic
- 1/2 c. Parsley, finely chopped
- 1/4 c. Olive Oil
- 1/4 c. Apple Cider Vinegar
- 2 tbsp. Honey
- 1 tbsp. Brown Mustard
- 1 tsp. Black Pepper
- Salt, to taste
Instructions
Bring a large pot of water to a boil; add potatoes and cook until tender, about 10 minutes.
At the same time, cook bacon until crispy; remove from pan, leaving 1/4 of grease behind. Cook shallots and garlic in bacon grease until shallots are translucent and garlic is fragrant. Whisk in olive oil, apple cider vinegar, honey, mustard, and black pepper; cook until warmed through and emulsified.
Drain potatoes and place in a large bowl. Toss with bacon and parsley, then coat with dressing. Season with salt as needed, and serve warm or at room temperature.
