Green Goddess Soup

Made with loads of fresh greens, plenty of broccoli and peas, and just a hint of cream, this soup is packed with essential vitamins and nutrients while still being cozy enough for fall. Enjoy it as a first course, a light lunch, or as part of a healthy dinner!

Ingredients
- 3 c. Broccoli Florets & Stems
- 2 c. Green Peas
- 4 c. Spinach, packed
- 2 c. Arugula, packed
- 2 Leeks, chopped & thoroughly washed
- 4 c. Chicken or Vegetable Stock
- 3 Garlic Cloves, minced
- 1/2 c. Basil, packed
- 1/2 c. Italian Parsley, packed
- 1 small Lemon, juiced
- 2 tbsp. Olive Oil + extra to finish
- Salt & Pepper, to taste
- Cream or Crème Fraiche, for serving
Instructions
Heat a large, heavy-bottom pot on medium until hot, then add olive oil and heat. When oil is hot, add leeks and garlic. Saute until garlic is fragrant and leeks have wilted and taken on a bright green color; season lightly with salt and pepper, then stir in broccoli, peas, and stock. Cover pot, then raise heat to medium-high and bring to a boil.
When soup comes to a boil, reduce heat and simmer for 7 to 10 minutes or until broccoli and peas are tender. Wilt in spinach, arugula, basil, and parsley. Using an immersion blender or heat-friendly blender, puree soup until smooth and creamy. Add fresh lemon juice, and season to taste with salt and pepper. Serve with a drizzle of olive oil and a swirl of cream or creme fraiche.
