Lemon Ricotta Protein Pancakes

Ingredients

  • ¾ C. Pancake mix
  • 1 scoop Garden of Life Sport Grass Fed Whey + Skin Protein Powder
  • ¾ C. Water
  • ¼ C. Ricotta cheese
  • 1 heaping Tbsp. Lemon zest

Instructions

  1. In a medium bowl, stir together the pancake mix, protein powder, water, ricotta, and lemon zest until mostly smooth (there will be a few small lumps).In a medium bowl, stir together the pancake mix, protein powder, water, ricotta, and lemon zest until mostly smooth (there will be a few small lumps).

  2. Heat a greased skillet over medium-low heat. Pour about ¼ cup batter into the pan for each pancake. Cook until bubbles form and pop on the surface of the pancake. Flip pancake and cook until done. Repeat with remaining batter.

  3. Serve warm topped with a sprinkle of lemon zest and any other desired toppings.
