Microgreen Pesto

Ingredients

  • 2 C. Microgreens
  • 1 C. Basil
  • 1 Clove of garlic, crushed
  • 1/2 Lemon, squeezed
  • 1/4 C. Roasted pine nuts
  • 1/2 C. Olive oil
  • Salt & pepper, to taste
  • 1/3 C. Parmesan Cheese

Instructions

  1. In a blender, add the microgreens, basil, garlic, lemon juice, Parmesan Cheese, and olive oil. Blend to a spreadable paste.

  2. Adjust flavors – add salt, pepper, olive oil and more lemon juice to reach the consistency and taste you desire.

  3. Enjoy immediately or store in an airtight, sterilized container in the fridge for up to 5 days.
