Parmesan Asparagus Fries
These crispy, crunchy asparagus fries are delicious and healthy!

Ingredients
- 1 C. Grated Parmigiano Reggiano cheese
- 2 C. Panko bread crumbs
- 1/2 tsp. Black pepper
- 1 tsp. Salt
- 2 tsp. Italian seasoning
- 1 C. Flour
- 12 Asparagus spears, woody ends removed
- 2 Eggs, beaten
Instructions
Preheat oven to 425 degrees, and spread a piece of parchment paper on a baking sheet. In a flat dish, combine panko and parmesan; in a separate dish, combine salt, pepper, Italian seasoning, and flour.
Dredge asparagus first in seasoned flour, then in egg, and finally in the panko-parmesan mixture. If a thicker crust is desired, dredge again in egg followed by panko. Repeat until all asparagus spears are breaded, then arrange in a single layer on the prepared baking sheet. Bake until golden brown and tender, about 10 to 15 minutes. Serve simply with fresh lemon or with garlic aioli for dipping.
