San Marzano Tomato Sauce with Cheese Tortellini and Italian Sausage

Ingredients
- 1 package Pasta Prima fresh Cheese Tortellini
- ½ cup Cobram Estates olive oil
- 1 package(4) Niman Ranch sweet or spicy Italian sausage
- 1 medium onion diced
- 4 cloves fresh garlic chopped
- 28 ounces crushed Ital Brand San Marzano tomatoes
- 1 bunch fresh basil, finely chopped
- 1 tablespoon sea salt
- 1 tablespoon sugar, optional
Instructions
In a cast iron Dutch Oven add olive oil and sausage. Saute sausage on both sides until it caramelizes and browns.
When the sausage has browned add the diced onion and chopped garlic. Continue cooking until the onions are translucent.
Add crushed tomatoes, rinse cans with just a little water and add to the sauce; add chopped basil, sea salt and black pepper to taste (don’t over season, you can always add more later). If you choose to add sugar now is the time to add it.
After your sauce has reached a boil, reduce the heat to simmer and continue to cook for at least two hours. If you've got the time let it simmer for 4-6 hours for an amazingly rich tomato sauce.
