Shortbread Cookies with Royal Icing
Rich and buttery, these cookies are a holiday classic for a reason!
Ingredients
- 2 c. All Purpose Flour
- 1/2 tsp. Salt
- 1/2 c. + 2 tbsp. Powdered Sugar
- 1 tsp. Vanilla Extract
- 1 c. Unsalted Butter
- 1 tsp. Water
- Icing
- 3 oz. Pasteurized Egg Whites
- 1 tsp. Vanilla Extract
- 4 c. Powdered Sugar
Instructions
In a food processor, combine flour, sugar, and salt; add butter, vanilla, and water, and combine until a dough begins to form. Form dough into a log and chill for at least one hour or overnight.
Preheat oven to 375 degrees. Slice log into 1/3-inch thick disks and transfer to a baking sheet. Bake for 12-14 minutes, rotating pans halfway through. Allow five minutes to cool on tray before transferring to cooling rack.
For the Icing: Beat egg whites and vanilla together until frothy, slowly add powdered sugar and beat until mixture forms stiff, glossy peaks. Transfer to piping bag to decorate cookies.
