Sicilian Watermelon Pudding (Gelo di Melone)

Ingredients
- 1 (3 lb) Seedless Watermelon, fruit chopped & pureed until smooth
- 1/2 c. Corn Starch
- 3/4 c. Sugar
- 1 tsp. Cinnamon
- 1/4 tsp. Ground Cloves
- 1 tsp. Vanilla Extract
- 2 sprigs Fresh Mint
- Crushed Pistachios, Whipped Cream, & Chopped Dark Chocolate (for serving)
Instructions
Pass pureed watermelon through a fine mesh sieve to remove separate pulp from juice. Discard pulp and reserve juice.
Combine corn starch, sugar, and 1 cup of watermelon juice in a sauce pot. Heat on medium, stirring constantly until starch and sugar have dissolved. Add remaining juice, cinnamon, cloves, vanilla, and mint and bring to a boil, whisking constantly. Continue cooking, whisking constantly, for about 6 minutes, then discard mint, cover, and allow to cool to room temperature.
Transfer cooled watermelon mixture to serving cups, then refrigerate until set, about 4 hours. Top with pistachios, chocolate, and whipped cream to serve.
