Spicy, Smoky, Grilled Watermelon

As summer marches on, finding new ways to use watermelon can be a challenge. Try our grilled watermelon recipe to spice things up a bit!

Ingredients

  • 1 watermelon, cut into 1 inch wedges
  • 1/4 c. honey
  • 1/4 c. fresh lime juice
  • 2 tsp. Cayenne pepper
  • 1 tsp Chipotle chili powder
  • 1 tsp. salt
  • 1/2 c. fresh mint, chopped

Instructions

  1. In a small bowl, whisk together all ingredients except watermelon and mint.

  2. Heat your grill to high heat. Clean and oil the grill grate. Brush each side of the watermelon with the sauce. Grill watermelon slices for about 2 minutes per side.

  3. Remove from grill, sprinkle with mint and serve.
