Stir Fried Pea Shoots

Ingredients

  • 1 Tbsp. Oil- (peanut, olive or avocado)
  • 4-6 Garlic cloves, roughly chopped
  • 1 Shallot, chopped
  • 1/2 tsp. Chili flakes
  • 8 C. Pea shoots (about 6-8 oz)
  • Salt and pepper to taste
  • 2 Tbsp. Mirin or cooking sherry

Instructions

  1. Heat oil in a wok, or large sauté pan or cast iron skillet over medium heat.

  2. Add garlic and shallot and stir fry 2 minutes until fragrant and just lightly golden, add chili flakes, stir fry 30 seconds.

  3. Add pea shoots. Stir fry 1 minute, seasoning with salt and pepper. Add the mirin (or cooking Sherry), and cook this off for 1 minute.
