Vegan Fried Rice

Ingredients
- 1 package Grain Trust Steamed Brown Rice
- 1 lb. Mycopia Organic Maitake Mushrooms or Chef Sampler Pack, roughly chopped
- 1/2 Red Onion, thinly sliced
- 1 thumb-sized piece Ginger, finely minced
- 2 Garlic Cloves, roughly chopped
- 8 oz. Baked Tofu, cut into 1 inch cubes
- 3 Green Onions, cut into 1 inch pieces
- 1 Bell Pepper, chopped
- 1 tbsp. Coconut Oil
- 1/4 c. Soy Sauce or Tamari
- 1 tsp. White Miso Paste
- 1 tsp. Sesame Oil or Sesame Chili Oil
- 2 tsp. Brown Sugar
- 1-2 tsp. Sriracha
- 1 tbsp. Water
Instructions
Reheat Grain Trust Steamed Brown Rice according to package directions, then set aside. Heat a wok or large skillet until very hot, then add coconut oil and heat. When oil is very hot but not smoking, add ginger and garlic, stirring frequently until fragrant. Add baked tofu cubes and continuing stir-frying about 2 to 3 minutes before adding red onion, Mycopia mushrooms, and bell pepper. Cook about 3 to 5 minutes or until veggies have softened and caramelized.
Whisk together soy sauce, miso paste, sesame oil, brown sugar, Sriracha, and water until smooth; reduce heat to medium, then add with green onions to veggies and tofu. Cook until sauce is bubbling, then stir in prepared brown rice. Toss rice until evenly coated in sauce and mixed with other ingredients. Serve fried rice immediately. Great for a healthy lunch or easy dinner.
