Ingredients
- 2 Tbsp organic flaxseed meal
- 6 Tbsp filtered water
- 2/3 cup organic maple syrup
- 1/4 cup organic coconut oil
- 1/2 cup + 2 Tbsp North Coast organic apple sauce
- 2 tsp organic vanilla extract
- 2 tsp baking powder
- 1/2 tsp Himalayan pink salt
- 1 cup organic freeze-dried raspberries
- 2 cups almond flour
- 1/2 cup cassava flour
- 3/4 cup no-sugar-added chocolate
- sea salt flakes (optional)
Instructions
Begin by preheating the oven to 350°F.
In a mixing bowl, combine flaxseed meal and water. Stir well and let it sit for 5 minutes.
Integrate the remaining wet ingredients into the mixture and mix until thoroughly combined.
Next, incorporate all the dry ingredients except for the chocolate. Stir until the mixture achieves a uniform consistency.
Gently fold in the chocolate to distribute it evenly throughout the batter.
Prepare a muffin pan with liners. Use a cookie scoop to fill the muffin cups, and optionally, adorn the tops with additional chocolate.
Bake at 350°F for 25-27 minutes, allowing the delightful aromas to fill your kitchen.
