Watermelon & Rosé Grown-Up Slushies

Ingredients
- 1 bottle Rosé Wine
- 2 c. Cubed Watermelon, Frozen
- 1 oz. Mint Simple Syrup (see recipe below)
- Fresh Mint Sprigs (for garnish)
- - MINT SIMPLE SYRUP:
- - 1 cup water
- - 1 cup white sugar
- - 1 cup fresh mint leaves
Instructions
Pour rosé into a freezer-safe dish, and place in the freezer. Freeze rosé until icey and mostly frozen, about 4 hours.
Transfer frozen wine to a blender and add mint simple syrup and frozen watermelon. Blend to a slushy consistency, then serve with a sprig of mint. Slushies will keep up to 1 week in a sealed container in the freezer, simply re-blend and enjoy.
To make Mint Simple Syrup: Combine water, sugar, and mint leaves in a small saucepan. Bring to a boil, stirring until sugar dissolves. Simmer for 1 minute. Remove from heat and let syrup steep, about 30 minutes. Pour syrup into a glass jar through a mesh strainer to remove mint leaves; let cool.
