Wine Mopped Tri Tip

Ingredients

  • 2-3 lb. Tri tip roast (Trimmed)
  • 2 tsp. Kosher Salt
  • 2 tsp. Coarse Black Pepper
  • 2 tsp. Garlic Powder
  • 1/4 C. Olive Oil
  • 1/4 C. Red Wine
  • 4 Cloves Crushed Garlic

Instructions

  1. Preheat grill to 350 degrees F for two-zone grilling.

  2. Make the dry rub by combining kosher salt, coarse black pepper, and garlic powder. Season Tri Tip on all sides.

  3. Make the mopping liquid by combining Olive Oil, red wine and crushed garlic in a bowl. Set aside.

  4. Place seasoned roast directly on the grill grates over indirect heat. Grill tri tip, flipping it every 6-7 minutes. Mop liberally with mopping liquid each time you flip the roast. Continue to grill until your roast is within 10 degrees of your final target temperature.

  5. Move the grilled tri tip over to the direct heat and grill for 2-3 minutes per side or until internal temperature reaches your desired final doneness.

  6. Move to a cutting board and tent with foil. Allow meat to rest for 10-15 minutes then slice against the grain and serve.

  7. Note: For Medium Rare pull at 125 and sear to 135.
